Birthday Cupcakes (100th Post)

Heya,

So this is the year of important birthdays for my friends and I as it is the year we turn 18! Turning 18 is one of the big age milestones in the UK, so i thought I'd put together a little Cupcake recipe to celebrate this!
The Cupcake recipe I am going to be sharing with you is a chocolate and vanilla marble cupcake with Chocolate swirl icing!



So the first thing you'll need are the ingredients:

For the Cupcakes-

  • 6oz Butter/ Margarine
  •  6oz Caster Sugar
  • 6oz Self- Raising Flour
  • 3 Eggs
  • 2tbsp Cocoa Powder
For the Icing-

  • 6oz Icing Sugar
  • A Dash of Milk
  • 2tbsp Cocoa Powder
  • 1/2tsp Vanilla Extract
  • 1.5oz Butter
Extra Bits- 

  • Piping Bag with Star Nozzle
  • Chocolate Decoration 
Method:

  1. First pre-heat your oven to 180'c (fan assisted) or 190'c 
  2. Next take a 12-hole Cupcake tin and line it with 12 Cupcake cases
  3. Then cream your butter and sugar together until light and fluffy 
  4. You should then add in each egg one at a time, mixing the egg into the butter and sugar each time.
  5. Now its time for the flour- sieve it in to the mixture and gently fold it in using a wooden spoon/ spatula
  6. From here it can get a little messy! Divide your mixture evenly into two bowls.  
  7. To one half add the Cocoa Powder
  8. To the other half add the drop of Vanilla Extract
  9. Next take two spoons. Use one of them to put a spoonful of the Vanilla Mixture into the bottom of each cupcake- only fill it to about a third of the case though! 
  10. Then use the other spoon to put in a spoonful of the chocolate mixture into the cases, so each case is around 2/3 full. 
  11. Take a cocktail stick and swirl it around in each the the cupcake cases to give that marble effect we want.
  12. Bake in the oven for around 20 minutes, until they bounce back when you touch them. 
  13. Leave to cool on a wire rack
  14. Once the cupcakes are cool- its time to make the icing! 
  15. Mix together the Icing sugar and butter
  16. Divide this into two bowls
  17. Add the dash of milk and cocoa powder to one of the bowls and mix
  18. To the other bowl add the vanilla extract and mix
  19. Next take your piping bag and put a two streaks of each icing along the edge of the icing bag, so it creates a pattern. 
  20. pipe a swirl of icing onto the top of each cupcake
  21. Finally place and cute chocolate decoration on each iced cupcake! 
And there you have my Birthday Cupcakes.
